How to select Shellfish

If you want to buy some fish in New York from store it is necessary to be sure that it is fresh. If you select frozen stuff the only you should check that the frozen bits are not smashed before freezing.

If you want to buy fresh fish, like Monkfish or Tilefish, you should be especially careful. If you buy whole fish, it should be always on ice. The fish body should be strong but elastic. Crustacean like Crayfish or American lobster should be frozen or cooked! After being catched, their body disintegrate very quickly.
